Dinner

Baked Salmon with Grilled Asparagus & Lemon Butter Dill Sauce

Ingredients
Seafood
Salmon (1lb)

Vegetable
Asparagus (1/2 lb)

Seafood
Salmon (1lb)

Seasoning
Extra-Virgin Olive Oil (1 tablespoon)
Salt (1/4 teaspoon)
Butter (1/4 cup)
Lemon (1/2 cup)
Fresh Dill
Salt (1/4 teaspoon)
Black pepper (1/4 teaspoon)
Paprika (1/4 teaspoon)
Granulated garlic (1/4 teaspoon)
Turmeric (1/4 teaspoon)
Basil (1/4 teaspoon)
Thyme (1/4 teaspoon)
Directions

Lemon Butter Dill Sauce
~In a small bowl combine 1/4 cut of butter, 1/2 lemon juice, 1/4 teaspoon granulate garlic, fresh dill (to individual liking) & stir.
~Place mixture into a saucepan, over medium heat.

Salmon
~In a medium mixing bowl, combine 1/4 pinch of black pepper, paprika, garlic, turmeric, basil & thyme
~Preheat oven to 400 degrees F.
~Rub seasoning over salmon until completely covered.
~In a baking pan, add 1 tablespoon of EVOO, then place salmon inside pan.
~Place salmon in aluminum foil, and seal.
~Placed the sealed salmon in a banking pan & oven to bake for 15 minutes, then open aluminum foil to and place back in to the oven for another 5minutes.

Asparagus
~Place the asparagus in a skillet with warm water to soak for 10 minutes.
~In a small mixing bowl, combine 1/4 cup butter, 1/2 cup of lemon juice, fresh dill & 1/2 teaspoon of granulated garlic. Over medium heat in a saucepan mix until hot
~ In a grill pan, place 1 tablespoon of EVOO, asparagus & include 1/4 teaspoon of salt & 1/2 lemon juice on asparagus.
~Rotate until grill marks appear evenly amongst all.

Guilty Pleasure

Red Velvet Cupcake
While walking to grab lunch (chicken salad salad without chicken from Potbelly’s) to my surprise, the Curbside Cupcake truck (Pinky) was parked near the Mandarin Hotel located on 12 Street S.W., Washington D.C. I had no choice but to indulge! Yes, I had a salad for lunch and a cupcake. F.Y.I I had no regrets while digging my claws into this guilty pleasure, nope not I!

Soup

Shrimp & Scallop Chowder w/ Red Potatoes
Ingredients


Seafood

Sea scallops (1/2lb)
Shrimps (1/2lb)

Dairy
Cream cheese (3 ounces) 
Heavy Whipping Cream (can carnation milk can be a substitute) (1 Pint)

Items
Celery
Cilantro
ScallionsRed Potatoes
Minced Garlic
Seasonings
Salt (1/4 teaspoon/pinch)
Black pepper (1/4 teaspoon/pinch)

Extras
White wine vinegar (1/2 teaspoon)
All-purpose flower (optional) (1 tablespoon)

Directions

~In a medium size pot, fill with water to cover red potatoes, boil until done.

~Drain water from pot & cut red potatoes into fourths.

~Pat dry bay scallops & shrimp with towel.

~In a skillet, over medium/high heat, add scallions 1/2 teaspoon of white wine vinegar & minced garlic.

~Combine bay scallops & shrimp until golden. Transfer to a mixing bowl until later.

~In a saucepan, over medium heat, add the pint of heavy whipping cream, 3ounces of cream cheese, chopped celery & cilantro (mushrooms etc) & stir until all ingredients are completely covered (all-purpose flower is optional if sauce does not thicken).

~Add a pinch of salt and pepper (taste sauce) (add more or less if needed).

~Add scallops, shrimp, scallions, minced garlic & red potatoes to the saucepan.

~Garnish with cilantro.

The Appetizer

Reporting live from my kitchen......

My passion is food. Yes, I said "FOOD" ! I am intrigued with the many dishes that can be created from simply combining items from your pantry and your local grocer. Also, I am completely and utterly in love with spices to the point where I have begun blending an assortment of species to create my own seasonings. After all, food is not only an art but also a science. This is a work of art where I plan to conduct unlimited appetizing experiments.

I am eager to take you all on a ride of discovering the FOOD in me.... I aim to share my experiences with an assortment of recipes for appetizers, entrees, desserts and as a bonus, drinks from local establishments in the Washington, D.C. Metropolitan area. From time-to-time, I will also include various articles and videos relating to food and restaurants. I.e. recipes, cooking utensils, dining spots and more.

I will be attending culinary school so that I may further discover the world of Culinary Arts.

Who knows, one day you maybe dining at my restaurant for a bite to eat!
